Pineapple Banana Bread

I hope to get back in the swing of things with my blogging. Sometimes life gets so busy.  Today I am posting about a wonderful bread recipe that we made. It is one that we had never tried before but it was delicious. This recipe makes 2 loaves. We made one with walnuts on top and one without, your choice.

3C flour
1 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
3/4 tsp salt
3 eggs
2C sugar
1 C oil
2 tsp vanilla
4 bananas mashed = 2 cups
1 C crushed and drained pineapple
1/2 C walnuts

In a large bowl mix flour, baking soda, cinnamon, nutmeg, and salt.
In another bowl beat eggs and sugar.  Add oil, vanilla, banana, and pineapple beat until well mixed.
Stir wet ingredients into bowl of dry. Pour into loaf pans and sprinkle the walnuts on top then bake for 60 minutes.   ENJOY!

  1. Oh, this looks great! Wonder if I could add a little toasted coconut? And macadamia nuts to the top for a TROPICAL bread! Perfect for summer! Thanks for sharing!

  2. Ohh, that sounds like it would be a really moist dense bread, so tasty! Thanks for sharing on Happy lil ❤'s are baking x
